Ingredients:
1/2 cup cooked & chilled brown rice
soy sauce, to taste
1 Tbsp coconut oil
1/2 cup broccoli
1/4 cup mushrooms
1/4 cup red bell pepper
1/4 cup edamame
... any veggies you have around will do!
Directions:
Heat oil a skillet, warm to medium high heat. Add vegetables and then stir in rice. Add a couple dashes of soy sauce, to taste. Stir around until hot and then serve!
